My preferences tend toward new distilleries or rare bottle openings. A whisky paired degustation menu is usually another draw card. There have been some very creative pairings in the past.

Clynelish. I know the Australian whiskys aren’t as favoured as the Scotch brands, however Spring Bay or Perhaps a Fureaux (Flinders Peat)
